Lentil Soup

Los Angeles has been blessed with some great rain this week so I was inspired to make my favorite soup for the chilly weather.  This recipe is easy, packed full of nutrients including protein, minerals, antioxidants, and helps with inflammation (which seems to also accompany chilly weather).  You will fall in love with the smell of onions and garlic sautéed in coconut oil and it makes the entire house smell delicious.  


-1 cup red lentils rinsed 

-1/2 a red onion chopped

-2 cloves of garlic chopped

-3 cups water

-1 teaspoon turmeric

-2 tablespoons coconut oil

-salt to taste

-cayenne pepper to taste

*almond milk is optional


1. Heat coconut oil on high in a medium pot (I love this pot and use it almost daily)

2. Add chopped onions and garlic and sautéed until translucent about 3-5 minutes

3. Add lentils and water and reduce heat to low

4. Add 1 teaspoon turmeric, 1/2 teaspoon salt and 1/2 teaspoon cayenne

5. Simmer for 20 minutes or until lentils are soft

6. Add salt and cayenne to taste 

*Add 1/4 cup almond milk for a creamier texture

7. Garnish with a sprinkle of cayenne
