Coconut + Lime Crackers

Crackers are a staple in our home and in an effort to diversify from our favorite butter crackers, I decided to whip up some crackers made with coconut flour.  These are really light and would be best with dip or a thin coat of soft cheese.  

Ingredients

  • 1/2 cup coconut flour
  • 1/4 almond meal
  • 1/4 teaspoon salt + more for the end
  • 1/2 coconut milk
  • 1/4 cup coconut oil
  • 1 lime
  • parchment paper
  • baking sheet

Process

  1. Preheat oven to 350
  2. Add dry ingredients to a bowl and whisk to mix
  3. Add coconut milk + oil to a sauce pan and simmer to melt
  4. Add wet mixture to dry mixture and use spatula to mix together
  5. Form a ball with the dough and place on top of parchment paper
  6. Roll out until dough is 1/4 inch thick 
  7. Use pizza cutter to form squares, there will be uneven edges, that's ok
  8. Bake for 15-20 minutes, until crackers are golden
  9. Remove from oven
  10. Squeeze juice from lime into a small bowl, add a pinch of salt and dissolve
  11. Using pastry brush, lightly brush crackers with lime juice

Radish and Pistachio Salad

Radishes are one food that I am trying to add to our rotation. This vegetable has never been something that I prepare but after attending many gatherings at my friend Misi's where she has these for an appetizer, I am inspired to add radishes to our summer line-up.  This salad is an easy recipe for the radish novice and I was delighted to finish every bite.

 

Ingredients

  • one bunch of radishes
  • 1 lemon
  • olive oil
  • a handful of mint leaves chopped
  • 1/8 cup shelled pistachios
  • salt to taste 

Process

  1. Wash radishes and slice thin
  2. Top with nuts and mint
  3. Toss with olive oil and the squeeze of a lemon
  4. Salt to taste
  5. Enjoy with people you love

Quick Turmeric Latte

I know I am a little late to the game, and Golden Milks were all the rage last year, but I finally made a Turmeric Latte.  Turmeric is a staple in our home, as I enjoy cooking curries and always add it to my bone brothso throwing together a quick latte was a natural process.  If you aren't already familiar with turmeric there are a few benefits that I should mention.  It is anti-inflammatory which is great for arthritis and many western diseases including heart disease, cancer, and Alzheimer’s.  Studies have also shown that turmeric can help with depression and is anti-aging.  There is a lot of information on turmeric and if you want a more in-depth summary of it's benefits you can go here but in this space, I try to keep it very basic so people at all levels of wellness can keep up.

Okay back to the latte.  Moon Deli is a great supplement company and their Golden Turmeric  with ginger and black pepper is next-level.  Black pepper helps your body with absorption and a lot of golden milk recipes will call for this addition, but this blend already has it.  The Golden Turmeric blend also has ginger which further helps with inflammation and digestion, among other things.  Here is the 1,2, 3, easy way that I made a Turmeric Latte.  

 

Ingredients 

  • Golden Turmeric
  • Vanilla Cream Stevia
  • Milk of choice, I used hemp
  • Cute Coffee Mug
  • Cute Wooden Spoon

Process

  1.  Heat one cup of milk until warm but not boiling 
  2. Add one teaspoon of Golden Turmeric Blend
  3. Add three drops of Vanilla Cream Stevia
  4. Stir and Enjoy
